Cherry Chicken Sauté

Fresh Ontario Cherries are great to eat by the handful but are also wonderful for this simple chicken dinner. Serve with rice and green beans.

Ingredients

  • 3/4 cup (175 mL) chicken broth
  • 1/4 cup (50 mL) balsamic vinegar
  • 2 tsp (10 mL) cornstarch
  • 1 tsp (5 mL) dried thyme
  • 1 tbsp (15 mL) vegetable oil
  • 4 boneless skinless chicken breasts (about 1 lb/500 g)
  • 1 medium Ontario Onion, chopped
  • 2 cups (500 mL) Ontario Sweet Cherries, pitted and halved

Instructions

In small bowl, combine chicken broth, vinegar, cornstarch and thyme; set aside.

In large skillet, heat oil over medium-high heat. Brown chicken with onion. Stir in broth mixture; bring to boil. Reduce heat and simmer, uncovered and stirring occasionally, until chicken is no longer pink inside, about 10 minutes. Stir in cherries; heat through, 3 to 5 minutes.
