A supply of this staple in your freezer serves as the basics for many quick and easy meals.
- 2 tbsp (25 mL) vegetable oil
- 2 medium Ontario Onions, chopped
- 2 cloves Ontario Garlic, minced
- 1 Ontario Carrot, grated
- 10 large Ontario Tomatoes peeled, seeded and chopped
- 1-1/2 tsp (7 mL) salt
- 1 tsp (5 mL) sugar
- 1/4 tsp (1 mL) pepper
In large saucepan, heat oil. Sauté onions in oil over medium heat for 10 minutes until softened. Add garlic and carrot and cook 5 minutes. Stir in tomatoes, salt, sugar and pepper. Increase heat to medium-high and bring to a simmer. Reduce heat to medium and simmer covered for 20 minutes.
Tip: For a thicker sauce, remove lid and simmer for 5 minutes or until desired consistency.
Note: : Sauce may be frozen for later use. Cool and spoon into freezer containers in quantities needed for a recipe. Seal, label amount, date and freeze.
