Beets Braised with Balsamic Vinegar

Ingredients

  • 2 green onions
  • 2 tbsp (25 mL) butter
  • 4 cooked, peeled Ontario Beets cut into strips
  • 1 tbsp (15 mL) balsamic vinegar
  • 1 tsp (5 mL) granulated sugar

Preparation

In shallow microwaveable dish, microwave 2 green onions, sliced, in 2 tbsp (25 mL) butter at High for 2 to 3 minutes until soft. Remove with slotted spoon and reserve. Add 4 cooked, peeled Ontario Beets cut into strips, stirring to coat with butter. Stir together 1 tbsp (15 mL) balsamic vinegar and 1 tsp (5 mL) granulated sugar to dissolve sugar; add to beets and microwave at High for 2 minutes, uncovered, to heat through. Sprinkle with reserved onion.
