Pasta with Cauliflower, Broccoli and Potatoes

Ingredients

  • 1 lb (500 g) penne noodles
  • 2 Ontario Potatoes, peeled and cut into 1-inch (2.5 cm) cubes
  • 1 cup (250 mL) Ontario Broccoli florets
  • 1 cup (250 mL) Ontario Cauliflower florets
  • 2 tbsp (25 mL) olive oil
  • 2 cloves Ontario Garlic, chopped
  • Pinch red pepper flakes (optional)
  • 1 Ontario Onion, chopped
  • 1/4 lb (125 g) Polish sausage or ham, diced
  • 1 can (28 oz / 796 mL) plum tomatoes, puréed
  • 1 tsp (5 mL) salt
  • 1/2 tsp (2 mL) pepper
  • 1/2 cup (125 mL) grated Parmesan cheese
  • 2 tbsp (25 mL) chopped fresh Ontario Parsley

Instructions

Bring large pot of salted water to boil. Add pasta and potatoes; cook 7 minutes. Add broccoli and cauliflower; cook until pasta is tender yet firm, about 5 minutes. Drain well.

Meanwhile, heat oil in deep skillet. Add garlic, red pepper flakes and onion; cook 5 minutes. Add diced sausages, tomatoes, salt and pepper. Cook 5 minutes, uncovered, until thickened. Combine with pasta mixture. Toss with cheese and parsley. Taste and adjust seasoning if necessary.
