Rutabaga and Carrot in Orange Glaze

Ingredients

  • 1 tbsp (15 mL) butter
  • 1 tbsp (15 mL) thawed orange juice concentrate
  • 1 tbsp (15 mL) water
  • 1-1/2 cups (375 mL) each of julienned Ontario Carrots and Ontario Rutabaga
  • 1 Ontario Onion, finely julienned
  • Salt and pepper to taste

Instructions

In 6 cup (1.5 L) microwaveable casserole, melt 1 tbsp (15 mL) butter. Stir in 1 tbsp (15 mL) thawed orange juice concentrate and 1 tbsp (15 mL) water. Add 1-1/2 cups (375 mL) each julienned Ontario Carrots and Ontario Rutabaga and 1 Ontario Onion finely julienned; toss to coat. Cover and microwave at High 6 to 8 minutes or until vegetables are tender-crisp, stirring partway through cooking. Season with salt and pepper to taste. Let stand a few minutes before serving.
