Turkey Chili

This chunky turkey chili may be made with ground turkey or fresh turkey thighs. Serve topped with shredded cheese and corn tortillas if desired.

Ingredients

  • 1-1/4 lb (625 g) ground Ontario Turkey or 2 lb (1 kg) Ontario Turkey Thighs, skin on, bone in
  • 2 tbsp (25 mL) vegetable oil
  • 1-1/2 cup (375 mL) chopped Ontario Onions
  • 1 cup (250 mL) finely diced Ontario Carrots
  • 1 large clove garlic, minced
  • 1 tbsp (15 mL) minced jalapeño pepper
  • 1 can (5.5 oz/156 mL) tomato paste
  • 1 can (28 oz/796 mL) diced tomatoes
  • 2 cans (19 oz/540 mL) bean medley or mixed beans, drained and rinsed
  • 3/4 cup (175 mL) chicken broth or water
  • 2 tbsp (25 mL) chili powder
  • 1 tbsp (15 mL) dried oregano
  • 1 tsp (5 mL) ground cumin
  • Shredded Ontario Cheddar Cheese

Instructions

In Dutch oven, heat oil over medium heat. Add ground turkey, onions and carrots. Cook for 7 minutes, stirring occasionally. Stir in garlic and jalapeño pepper; cook for 1 minute. Stir in tomato paste. Stir in tomatoes with juice, beans, broth, chili powder, oregano and cumin; bring to boil, stirring often. Reduce heat; cover and simmer for about 20 minutes. Serve topped with shredded cheese.

(Note: If using turkey thighs. To cook turkey thighs, place in large saucepan and cover with cold water. Bring to boil over high heat; cover and simmer for 20 to 25 minutes or until juices run clear when turkey is pierced. Remove to plate and allow to cool. Remove skin and bones; chop and set aside.
