Pita Pizza – Pronto

Pizza, one of the original fast foods, just got faster and more fun to make at home. Have a pizza "your way" when you use individual pita bread rounds for the crusts. Cheese (any kind will do) and Ontario Greenhouse Tomatoes are the only essential toppings -- mix and match others and in 15 minutes, custom-built pizzas emerge from the oven, fresh, hot and delicious.

Ingredients

  • 1 tbsp (15 mL) vegetable oil
  • 3 cups (750 mL) sliced fresh Ontario Mushrooms
  • 2 or 4 pita bread rounds
  • 3 cups (750 mL) shredded Ontario Mozzarella cheese
  • 2 cups (500 mL) chopped, seeded Ontario Greenhouse Tomatoes
  • 1/4 cup (50 mL) grated Ontario Parmesan Cheese
  • Dried oregano or basil leaves
  • Crushed red chili pepper

Instructions

Heat oil in nonstick frying pan. Sauté mushrooms until tender and liquid has evaported; set aside. For thin pizza crust, separate each pita into two rounds; for thick crust, use one whole pita. Place bread, hollow-side up, on baking sheet; sprinkle 3/4 cup (175 mL) mozzarella cheese over each. Top with mushrooms and tomatoes; sprinkle with Parmesan cheese. Add oregano and red chili pepper to taste. Bake in 350°F (180°C) oven 15 minutes or until hot and bubbly.

Try these combinations, or invent your own:

Brie cheese, smoked salmon, chopped Ontario Greenhouse Tomatoes and chopped fresh parsley.

Gouda cheese, chopped Ontario Greenhouse Tomatoes, caramelized onions and garlic.
