Ingredients
- 1/3 cup (75 mL) olive oil
- 3 tbsp (45 mL) balsamic vinegar
- 3 cloves Ontario Garlic, crushed
- 2 tsp (10 mL) granulated sugar
- 2 tsp (10 mL) dried oregano leaves
- 1 tsp (5 mL) dried basil leaves
- 1/2 tsp (2 mL) each salt and crushed red pepper flakes
Pita Wedges:
- 2 pita breads
- 1 tbsp (15 mL) olive oil
- Garlic powder
Salad:
- 3 Ontario Greenhouse Tomatoes, chopped
- 2 Ontario Greenhouse Sweet Peppers, thinly sliced
- 1 small Ontario Red Onion, thinly sliced
- 1 head Ontario Greenhouse Leaf Lettuce, torn
- 2 cups (500 mL) sliced Ontario Mushrooms
- 1 cup (250 mL) sliced Ontario Turkey Pepperoni
- 2 cups (500 mL) shredded Ontario Mozzarella Cheese
- 1 cup (250 mL) coarsely torn fresh Ontario Basil Leaves
Instructions
In small bowl, whisk together oil, vinegar, garlic, sugar, oregano, basil, salt and red pepper flakes.
Pita Wedges: Brush pitas with oil; sprinkle with garlic powder. Cut into wedges; place on baking sheet. Bake in 350°F (180°F) oven until crisp, 8 to 10 minutes.
Salad: In large bowl, combine tomatoes, peppers and onion. Whisk dressing and pour half over salad; toss. Add lettuce, mushrooms, pepperoni, cheese, basil and remaining dressing; toss. Serve with pita wedges.
