Caramelized Ontario Apple Bowls

Warm apple topping over frozen vanilla yogurt in tortilla bowls guarantees a winning dessert.

Ingredients

  • 4 6-inch (15 cm) whole wheat tortillas
  • 2 tsp (10 mL) granulated sugar
  • 1/4 tsp (1 mL) ground cinnamon

Apple Topping:

  • 1 tbsp (15 mL) butter
  • 2-1/2 cups (625 mL) peeled and quartered Ontario Apples
  • 1 tbsp (15 mL) cornstarch
  • 1 cup (250 mL) Ontario Apple Cider or Juice
  • 1 tsp (5 mL) vanilla
  • 1/4 tsp (1 mL) each ground nutmeg and cinnamon
  • 2 cups (500 mL) frozen vanilla yogurt
  • 1 tbsp (15 mL) toasted chopped pecans

Instructions

Lightly brush one side of tortilla with water. Combine sugar and cinnamon; sprinkle over top. Randomly pierce with fork. Shape, sugar side down, over inverted 4-inch (10 cm) bowl, lightly pressing. Microwave 2 tortillas on High for 2 minutes or until crisp. Remove from bowls and let cool on rack. 

Apple Topping: In saucepan, melt butter; cook apples over medium heat stirring for 4 to 5 minutes or until tender. Sprinkle with cornstarch. Stir in apple cider, vanilla, nutmeg and cinnamon; simmer until just boiling, 2 to 3 minutes. Let cool. 

To serve, scoop 1/2 cup (125 mL) yogurt into each tortilla bowl; spoon topping over each. Sprinkle with pecans.
