Fruit and Vegetable Compote

On a large cutting board arrange a variety of delicious local ingredients. Try a selection of mild to strong flavoured and soft and firm textured Ontario cheese; and local cured meats such as prosciutto and cured sausage. Crisp Ontario apple wedges and honey make for tasty additions. Serve with an assortment of crackers.

Ingredients

  • 1 Ontario Apple, peeled, cored and finely chopped
  • 1 Ontario Pear, peeled, cored and finely chopped
  • 1/4 cup (50 mL) finely chopped Ontario Onion
  • 1/4 cup (50 mL) Ontario Apple Cider or Apple Juice
  • 1/4 cup (50 mL) marmalade, preferably ginger
  • 1/4 cup (50 mL) packed brown sugar
  • 1/4 cup (50 mL) cider vinegar
  • 1/2 tsp (2 mL) each salt and ground nutmeg
  • Pinch ground cloves

Instructions

In small saucepan, combine apple, pear, onion, apple cider, marmalade, sugar, vinegar, salt, nutmeg and cloves; bring to boil, stirring often. Reduce heat and simmer, uncovered and stirring frequently, until thickened, 25 to 30 minutes. Let cool.
