Plum Sorbet

Ingredients

  • 3 cups (750 mL) halved pitted Ontario Blue or Prune Plums (about 8 Blue or 15 Prune)
  • 1/2 cup (125 mL) Ontario Honey
  • 1/4 cup (50 mL) white corn syrup
     

Instructions

Place plums in medium saucepan. Cover and cook over low heat for about 5 minutes or until starting to release liquid. Uncover, increase heat to medium and simmer, stirring often, for 5 to 10 minutes or until very soft. Let cool.

In blender or food processor, purée until smooth. Transfer to bowl and str in honey and corn syrup; cover and refrigerate for about 2 hours or until very cold.

Stir well and pour into ice-cream maker; freeze according to manufacturer's directions. Serve immediately or freeze in an airtight container for up to 1 month.
