Quick Herb Dip

Serve this healthy dip with a fresh medley of in-season Ontario vegetables. Try it as a spread for sandwiches and wraps.

Ingredients

  • 1 pkg (300 g) Ontario Organic Soft Tofu
  • 1/4 cup (50 mL) each chopped fresh Ontario Parsley and Ontario Greenhouse Sweet Red Pepper
  • 1/4 cup (50 mL) chopped green onion
  • 2 tbsp (15 mL) light mayonnaise
  • 1 tbsp (15 mL) coarse-grain Dijon mustard
  • 1/2 tsp (2 mL) black pepper
  • pinch of salt
  • variety of Ontario Organic Carrots, Ontario Button Mushrooms, Ontario Organic Bread and Crackers

Instructions

Drain tofu in sieve. Place tofu, parsley, red pepper, onions, mayonnaise, mustard, pepper and salt in food processor, process until smooth. If not using immediately, cover and refrigerate for up to 1 day.

Makes 1-1/2 cups (375 mL) of dip.
