Peach Cocktail Slushy

Slushies are no longer just for kids. A perfect combination of a chilled drink and dessert, this super easy slushy is summertime crave-worthy! For a non-alcoholic version, use juice.

Ingredients

  • 4 to 5 Ontario Peaches or Nectarines, pitted (about 1-1/4 lb/625 g) 
  • 1/2 cup (125 mL) vodka or orange juice
  • 2 tbsp (25 mL) Ontario Honey 
  • 2 tbsp (25 mL) fresh lime juice
  • 1 tbsp (15 mL) finely grated gingerroot
  • 8 regular size ice cubes

Garnish:        

  • Ontario Peach Wedges
  • Fresh Ontario Mint

Instructions

In blender, purée peaches with vodka, honey, lime juice and ginger until smooth. Pour into shallow metal pan. Freeze until just barely frozen (a little softer than solid), about 1 hour. 

Place ice cubes in blender and set to ice setting; crush until ice is in small pieces. Scrape in frozen peach mixture and blend until slushy consistency. If too thick, add a bit more liquid. It may be necessary to do this in two batches. 

Pour into 4 glasses. Garnish with peach wedges and mint.
