Ingredients
4 firm ripe Ontario Pears
2 tbsp (25 mL) fresh lemon juice
2 tbsp (25 mL) butter
1/2 cup (125 mL) Ontario Maple Syrup
5 cups (1.5 L) cubes (1 inch/2.5 cm) day-old white bread (about half a 600 g loaf)
5 large Ontario Eggs
2-1/2 cups (625 mL) Ontario Milk
1-1/2 tsp (7 mL) vanilla
Topping:
2/3 cup (150 mL) chopped walnuts
1/4 cup (50 mL) packed brown sugar
2 tbsp (25 mL) butter, softened
Instructions
Peel, core and slice pears. Place in bowl; toss with lemon juice to prevent browning.
In large skillet, melt butter over medium-high heat; cook pears and 2 tbsp (25 mL) of the maple syrup, stirring occasionally, for 5 to 8 minutes or until pears are tender and liquid has evaporated. Stir in bread cubes. Spread pear mixture in 12-cup (3 L) casserole or glass baking dish and set aside.
In medium bowl, whisk together eggs, milk, remaining maple syrup and vanilla. Pour over pear mixture; stir well to coat bread evenly.
Topping: In small bowl, combine walnuts, brown sugar and butter; sprinkle over pudding.
Bake in 350°F (180°C) oven for about 45 minutes or until just set in centre. Serve warm or cool.
