Introduction
Ontario is the second largest producer of veal in Canada. We produce approximately 70,000 veal calves every year.
The definition of “veal cattle” includes:
- male calves or freemartin female calves of any dairy breed or dairy crossbreed, each weighing no more than 150 lbs. (68 kg)
- intact male calves of any dairy breed or dairy crossbreed, each weighing no more than 450 lbs. (204.1 kg)
- calves of any breed, each weighing no more than 769 lbs. (348.8 kg), that are to be sold for harvest at an auction or through a livestock dealer
- calves of any breed that are sold for harvest to a processor to be processed into a veal carcass within the meaning of section 304 of the Safe Foods for Canadians Regulations
